Cupid Is Counting Down To His Favorite Holiday and We're Making Cookies...

White Chocolate Dipped Red Velvet Cookies by Sally's Baking Addiction

With Valentine's Day right around the corner, I am full bursting with ideas to make it sweet for you and your loved ones, and I can't wait to share. 

If you are anything like me, the holiday is a great excuse to decorate, cook or bake, (and also maybe send a surprise care package or two). 

Today I am going to share one of my very favorite recipes (That I learned from Sally's Baking Addiction), for White Chocolate Dipped, Red Velvet Cookies.  These cookies are literally a cookie lovers dream in a soft and chewy take on red velvet cake, but my favorite part, is finishing them off by adding two candy eyes (especially for Valentine's Day) and turning them into the from scratch version of the Oreo Love Bug Cookies.   

If you're looking to make the Oreo Love Bugs and skip the baking for another day, you can substitute an Oreo, or your favorite cookie and just follow the steps for dipping!

It's east to make these Gluten free by substituting the all purpose flour for King Arthur measure to measure flour in the same amount, or even using the Gluten Free Oreos

Also if you don't have a set or two of silicone baking mats I highly recommend them - they make everything that much easier.

  • 1 ½ Cups + 1 Tablespoon All Purpose Flour
  • ¼ Cup Cocoa Powder
  • 1 tsp Baking Soda
  • ¼ Tsp Salt
  • ½ Cup Butter, softened and at room temperature
  • ¾ Cup Brown Sugar
  • ¼ Cup Granulated Sugar
  • 1 Large Egg, at room temperature
  • 1 Tbl Milk or Buttermilk
  • 2 tsp Vanilla Extract
  • ¾ tsp Red Food Coloring
  • White Melting Chocolate
  • Sprinkles
  • Candy Eyes

Instructions

  1. Preheat oven to 350°F (177°C). Line large baking sheets with parchment paper or silicone baking mats, . Set aside.
  2. Whisk flour, cocoa powder, baking soda, and salt together in a medium bowl and set aside.
  3. Beat butter, brown sugar, and granulated sugar together on medium speed for 2 minutes or until creamy. 
  4. Add egg and vanilla extract and mix on high until combined, scraping down the sides and bottom of the bowl as needed.
  5. Slowly pour the dry ingredients into the wet ingredients in batches until well blended
  6. Add the milk and food coloring, and then mix on low speed until everything is combined. 
  7. The dough will be sticky. If you want a more vibrant hue, beat in more food coloring a little at a time. 
  8. Cover and chill the dough in the refrigerator for at least 2 hours - If chilling for longer than a few hours, allow dough to sit at room temperature for at least 15 minutes before rolling and baking
  9. Scoop and roll cookie dough, about 1.5 Tablespoons of dough each.
  10. Arrange on the baking sheet about 3 inches apart.
  11. Bake for 11-13 minutes or until the edges appear set. Centers will look very soft.
  12. Remove cookies from the oven and cool for 5 minutes on the baking sheets. Transfer to a wire rack to cool completely.

White Chocolate Dipping and Love Bug Finish

  1. In a microwave-safe bowl, melt the white chocolate in 15 second increments stopping and stirring after each until perfectly smooth.
  2. Dip half of each cooled cookie into white chocolate Garnish with 2 candy eyes and sprinkles.
  3. Allow chocolate to set completely at room temperature or in the refrigerator.
  4. Cover and store leftover cookies at room temperature for up to 3 days or in the refrigerator for up to 1 week.
